Danish Pastry Recipe - Wienerbrød - The "Danish"

 

Wienerbrød

This is an authentic traditional Danish pastry recipe Not a pale imitation that just throws sugar on a pastry. Honestly it is a difficult recipe and not for the faint of heart, but if you've never heard applause after you served dessert, then this is a recipe to try. Danes generally make their pastries in this way. It is a recipe for a full tray of Danish pastries, not the round individual bits that North Americans incorrectly associate with being a "Danish".

As a substitute to the cream you may choose to used stewed fruit.


Ingredients:

  • 0, oz/20g Fresh Yeast
  • 5 fl oz - ml - 2/3 cup of Cold water
  • 2 egg yolks
  • ½ teaspoon salt
  • 1½ tablespoon sugar
  • 0, oz / 15g butter or margarine
  • 10, oz / g wheat flour
  • 11, oz / g margarine


Filler:

  • 5, oz/g marzipan mass
  • 2 tablespoon wate
  • ½ cup jam


Brush:

Garnish:

  • 1, oz/50g almond
  • cane sugar

Cream:

  • 1 egg
  • 0, oz/25g sugar
  • 2½ teaspoon corn flour
  • 8, fl oz - L – 1 (1/4) quarts of Milk
  • ½ pod of vanilla

Dough:

  1. Stir the yeast into the cold water. Add the egg yolks, salt, sugar, and whip vigorously. Crumble in the 0, oz/15g butter into the flour

    Danish Wienerbrød

    A couple of years ago my husband and I attended a week-long seminar at the John C. Campbell Folk School in beautiful Brasstown, North Carolina. The school is based on the Danish design of a &#;Folkehøjskole&#; which is a non-competitive setup and emphasizing on teaching practical skills.  They offer classes in anything from Clay to Dance to Knitting to Music to Woodworking, and so much more. Your days at the Folk School are filled with many activities from sunrise to sunset, but although busy it is also relaxing and the school is set in an incredibly peaceful environment. Joe took Blacksmithing and I took Scandinavian Baking. The baking class was taught by Kim Hendrickson who was full of useful baking/cooking tips and who had answers to all of my questions about yeast and baking techniques. It was a week filled with baking delicious treats, some of which I was familiar with and some which were new to me. I hope that Joe and I can one day go back to the Folk School for more classes for we had such a wonderful time there and we got to meet so many interesting people.

    Wienerbrød is also known as &#;Danish pastry&#;. As varied as the name is, so are the variations: The delicious Danish pastries can be filled with vanilla cream or marzipan (remonce). Here is a traditional recipe for a Danish Wienerbrød stang with remonce.

    Danish Pastry

    Preparation time

    45 Minutes

    Ingredients

    • Egg
    • 65 ml Milk
    • 46 g Sugar
    • 1/3 Cubes Fresh Yeast
    • g Flour
    • 50 g Butter at room temperature
    • g Cold Butter
    • 30 g Marzipan
    • 1 Tbsp Sliced Hazelnuts
    • 1 Tsp Water
    • 3 Tbsp Powdered Sugar

    • 0,5 Egg
    • &#;65 ml Milk
    • &#;15 g Sugar
    • &#;1/3 Cubes Fresh Yeast
    • &#; g Flour
    • &#;20 g Butter at room temperature

    First, prepare the batter. To do this, break the egg and whisk it. Mix the milk, sugar, half of the beaten egg and yeast using a hand mixer or food processor.

    Add the flour and then the soft butter at room temperature to the mixture. Mix with the dough hook or knead by hand until a smooth dough forms. Shape the dough into a ball and leave to rise for about half an hour.

    Danish Pastry - Dansk Wienerbrod

    Directions

    Sift flour and mix with sugar and salt.

    Mix yeast with a little cold milk.

    Add this, the rest of the milk and the beaten egg to flour and sugar.

    Beat well until smooth with a wooden spoon.

    Roll out the dough on baking board to 1 finger thickness.

    Spread small pieces of butter on ⅔ of the dough. The butter must have same consistency as the dough; if it is too soft it melts into the dough.

    Fold together into three layers like folding a napkin, first the part without butter.

    Roll out and fold again. Repeat three or four times.

    Leave in cold place ½ hour.

    This is the dough with which many different kinds of Danish pastry is made.

    When pastry is shaped, place on baking sheet and leave in cold place to rise for 15 to 20 min., then brush with egg white and bake in a fast oven until golden brown.

    Cocks' Combs (Hanekamme). Roll out dough to finger thickness and spread with a paste made of equal parts of butter and sugar, then cut into square pieces 4" x 4".

    Place filling across middle and fold over. Press the edges firmly together and make 4 to 5 deep slashes in this side.

    Let rise, brush with egg white and spread
